Chufa (Cyperus esculentus) Chufa, also known as "nut grass" or "galingale,"can be found along the Wildlife Loop (map). This sedge reproduces by seeds and tubers. Chufa's underground tubers are eaten by waterfowl. Considered a delacacy by some people, the tubers can be enjoyed raw or cooked. Chufa can grow to three feet in height. At the top of the plant, the flower spikes and leaves spread out from the three-sided stem. The photos were taken in early August. |
